Welcome to the journey from PioReactor® to FlavorReactor. This project was undertaken as part of the PS70 SC Fabrication Lab at Harvard University, exploring the fusion of technology and fermentation to develop new flavor profiles.

Fermentation is, in many ways, the manipulation of microorganisms to design organoleptic profiles that we wouldn't otherwise be able to achieve. Although "fermentation" is one of those words that, in the last decade, has accepted multiple definitions (just ask a microbiologist and a chef, and you'll see how diverse the meanings can be), it is, in fact, one of the oldest culinary techniques in the world. What makes it even more remarkable is that the very microorganisms responsible for it existed on this planet long before we could ever think of cooking through them.
